Half Pint Recipe: Stuffed Apples


* Cut the apple in half, removing the core.

* Make some couscous (Ours is Israeli couscous. We added apricots and steeped them in the water. You could change up the dried fruit or add nuts or seeds.)
*Add roasted butternut squash to the couscous. (You could also add sweet potato.)

*Add 1/4 tsp. dry mustard, salt, pepper and chopped rosemary. (Sage would also be good.) Add 1 Tbsp. water to the pan.

*Cover with 2 layers of plastic wrap and then one layer of foil.
*Bake at 325 degrees for 30 minutes or until the apple is tender.
*Pull out and allow to rest for a few minutes.


* Add nuts to the mixture or sausage.
* Drizzle with maple syrup.
* Serve with seasonal grapes.
* Serve as a side dish to your entree.
