Roasted Garlic

I like to make a roasted garlic puree to add flavor to lots of different foods.  Try it this week!

Yields 1 quart

Keeps in the fridge for 1 month.

1. Start with 1 cup peeled, whole garlic.  Place the garlic and 1 cup olive oil in a skillet and simmer to golden brown.  (or throw into a hot oven)

2. Pour oil and garlic carefully into a blender.  Add 1 cup vegetable or chicken broth, along with a pinch of salt and pepper.

3. Puree.

4. Allow to cool thoroughly and then store in the fridge.

Ideas:

*Add to red wine vinegar to make a simple vinaigrette.

*Toss with pasta and your favorite veggies or meat.

*Toss with steamed spinach or veggies.

*Spread on warm bread.
